Sweet Potato Gratin

This is not your typical sweet potato casserole; this gratin is savory as opposed to the standard brown sugar and marshmallow dish.  We served this when my aunt and uncle came to town and my aunt (who happens to be a fabulous cook) loved it and asked for the recipe!  Even my dad liked these sweet potatoes; and he usually only like basic Idaho potatoes.  This recipe is a keeper!



Sweet Potato Gratin
Yields 8 to 10 servings

Ingredients
3 tablespoons butter
4 pounds sweet potatoes, peeled and cut crosswise into 1/4-inch thick slices
3/4 cup Parmesan cheese
2 cups heavy whipping cream
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper

Directions
Preheat oven to 400 degrees.  Butter and 9x13-inch baking dish with 1 tablespoon butter.  Arrange a third of the sweet potatoes, overlapping slightly, in the dish.  Sprinkle with 1/4 cup Parmesan cheese.  Repeat with two more layers of sweet potatoes and cheese.

In a small bowl, combine the cream, salt, pepper, and cayenne.  Pour over potatoes.  Bot with the remaining 2 tablespoons butter.  Cover dish with foil and bake 20 minutes.  Remove foil and continue baking until sweet potatoes are tender and the top is browned, about 20 to 25 minutes.
