The Lofthouse recipe makes a boatload so I halved the batch (actually divided it by 3; changes noted below) and used a small heart cut-out, perfect for a two-bite cookie. These also package up very nicely because the glaze hardens after you let them set for a few hours.

I received a very special treat from my mom last week... an ICE CREAM MAKER!!! I don't know how I didn't have one before -- ice cream is my favorite treat and all. Even though summer is coming to a close, no worries because I eat ice cream year round. I can guarantee you will see many fall and winter flavors in the coming months. I already have about 100 different flavor combinations that I can't wait to make. Any suggestions??
The flavors in this yogurt were inspired by my absolute favorite ice cream shop in Columbus, OH, Jeni's Splendid Ice Creams. I frequent Jeni's at least once each time I visit my hometown and each flavor is better than the next. This is a bit of a healthier take on Jeni's version but it was just what I wanted -- tangy and tart lemon yogurt swirled with a sweet blueberry sauce.
Note: If you really want to treat yourself, Jeni's accepts on-line orders. Make sure the Salty Caramel makes it into your shopping basket.

This recipe was inspired by a few of my favorite ingredients -- they ended up pairing together so nicely and created one delicious cookie! These are crispy on the outside but chewy on the inside. The white chocolate is such a compliment to the lemon and the coconut is very subtle.

My almost-10-year-old neighbor, Ivy, helped me bake these bars. She made all of the filling and is quite the little baker!
Please do yourself a favor and make these ASAP! These are rich and light at the same time and the flavors are perfect for the summer. The graham cracker crust has a touch of cinnamon in it, which gives these an extra bite of flavor. These bars will definitely be made again soon!

With Easter just around the corner, I thought you may be looking for a few brunch ideas. The combination of lemon with dried cranberries turned out perfect in this quick bread. The original recipe called for dried cherries so you could do that as well. Everyone that tried this bread really enjoyed it and many came back for seconds.
I'm adding this to the list of treats to make again post-Lent so I can enjoy it for myself!

Family Reunion

The whole Schlater clan was reunited (minus a few and we missed you!!) a few weekends ago in Columbus for a little summer family reunion. This is quite a feat considering some traveled from as far as Hawaii, Florida, Atlanta and South Carolina. Since my parents' were kind enough to host this gathering, we felt it was our responsibility to make sure everyone enjoyed some good food and drink :) We put ourselves in charge of desserts (of course) and thought we'd also add an appetizer and drink to the menu.
All of these recipes will be posted in the coming weeks.
First, we mixed up a refreshing vodka lemonade mixer.
Next, we thought this Peanut Snack Mix would be great for people to snack on before dinner was served.
These Tomato and Cucumber Bruschetta Cups caught my eye on Brown Eyed Baker. They are such an EASY appetizer to throw together and great for summer (as long as you have a place to refrigerate them before serving!).
I think half of these Lemon Drop Cookies were gone before we even started dinner. As soon as I saw this recipe, I knew I would love them but they exceeded my expectations. I'm trying to find an excuse to make them again.
My mom insisted we make something with chocolate. It is a good thing I made these Brownie Peanut Butter Cups because everyone raved about them. Everyone always seems to be impressed by these little treats but I promise, they are so easy!
Molly made her favorite Lemon-Scented Blueberry Cupcakes. Aren't they adorable? I finally had the opportunity to try these for the first time and LOVED.

This cake is perfect for any brunch or if you want to end the night with a lighter dessert. The cake has a very mild flavor so you can jazz it up any way you like; fresh whipped cream, raspberry sauce, fresh fruit, or blueberry sauce like I used. The lemon flavored olive oil drizzled on top of the cake before serving adds an extra hint of lemon and tastes wonderful!

We are so sorry we haven't posted anything new in a while. It has been a crazy few weeks for us with graduation, a family trip to Alaska, and all three of us have moved!! But we have missed our blog so much and are glad to be back :)
These cupcakes couldn't be more perfect for the first post back. They are delicious; not too lemony and the fresh, summer blueberries are so juicy! I made mini cupcakes and the batter made about 30 of them. If you make normal sized cupcakes it should make about twelve. Also, I had to whip up some more icing once I realized I didn't have enough, so I have adjusted the original recipe so that there is plenty of icing to frost all of your cupcakes (the recipe listed below shows the adjusted amounts). Enjoy!

One of my favorite restaurants in Columbus, Northstar Cafe, serves amazing ricotta pancakes for breakfast. I wanted to make breakfast for dinner the other night and those amazing ricotta pancakes crossed my mind; so I thought I would try and recreate them. I had never made ricotta pancakes before this so I wasn't sure what to expect, but these were super easy and delicious! I actually had leftovers in the morning for breakfast and thought they tasted even better the next day.

Happy (Belated) Birthday to Sarah and Molly! These birthdays obviously deserved very special treats. For Sarah, I made these lemon cupcakes because she loves lemon (obviously). The cake bites, adapted from Bakerella, that I made for Molly will be featured in a later post.
I also found these cute pink cupcakes liners in a set at Urban Outfitters. I didn't see the kit on the website but Elinor Klivan's Cupcake Kit can be found on Amazon.com. Aside from the cupcake liners (which are too cute), the book features 14 recipes that I'm dying to make!
