I have been loving Gina's Skinny Recipes lately.  In case you've never visited her website, it is filled with TONS of healthy recipes.  I love how she keeps things simple and puts a healthy spin on classic dishes.

This salad is so simple and requires minimal time and ingredients.  I love the taste of the "peppery"arugula but you could mix in whatever greens you prefer.

Marathon training is in full force.  Somehow we are already 6 weeks into training -- I'm not sure where the past 5 weeks have gone -- but that means the Chicago marathon is a mere 13 weeks away.  As the mileage increases, fueling becomes a top priority.  

This pasta was just what I needed to fuel up for my long run last week.  Simple, light and fresh.

I got the Cooking Light - Fresh Food Fast cookbook for Easter and I am loving it!  I am going to try and work my way through the entire cookbook because every recipe looks amazing, really, every single one.

This pasta seems like an impressive dinner but it takes no time at all to put together...and it tastes delicious!  The creamy sauce gives you tons of flavor without the guilt.  And there's nothing like fresh shrimp in South Carolina!

As I have mentioned before, I love cooking in my parents' kitchen whenever I go home.  There are many reasons for this -- there is always a stocked pantry, plenty of counter-space, a double oven, every utensil imaginable and the list goes on... BUT the number one reason I like to cook at home is because cooking with someone by your side is so much more enjoyable!

Since we couldn't eat meat on Friday, my parents and I made this pasta while I was home.  It was AMAZING.  My mom has made this many times.  She has used fresh shrimp (in South Carolina), frozen shrimp with tails and frozen shrimp without tails.  She said she definitely recommends the frozen with tails (or the fresh, if you are lucky enough to live in a Coastal town).

I couldn't have asked for a better Sunday dinner!  I have had this recipe on file for quite some time now and I finally got around to making it.  I'm not sure why it took me so long because this is actually a very simple recipe. 

The combination of ingredients in this pasta is perfect.  It is packed with flavor and good for you too.  I cannot wait to have my leftovers!

I love finding a recipe that I can make on Sunday to get me through the week... lunches, snacks, dinner, etc.  This was great over lettuce for lunches and in the evenings, when I didn't feel like cooking, I snacked on it.  This would also be great as a side for a summer barbeque :)

I have never used barley before but I loved it.  Healthy and delicious.  Even better, the ingredients in the dish are ones that I normally always have in my refrigerator/freezer/cabinet.

I was having a few friends over for dinner and was looking for a good (easy) pasta recipe to serve.  I knew what I wanted but couldn't seem to find a recipe that fit the bill.  This was sort of thrown together/based very loosely off of a few recipes I came across during my search.  I don't make pasta often but I thought it was delicious!
