Banana Chocolate Chip Cookies

I think that by now you all know that I love baking with bananas.  So here is another banana recipe for your enjoyment!  These are a little different from your standard banana cookie because these actually have the texture of a cookie; they aren't cake-like like a lot of other cookies are.  The recipe called for walnuts but I decided to substitute more chocolate chips instead, and I think I made the right choice!  These are realllly good and they freeze well, so you can make them ahead of time.



 
Banana Chocolate Chip Cookies
Yields about 3 dozen

Ingredients
1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 1/2 sticks unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup mashed ripe banana
1 cup old-fashioned rolled oats
12 ounces semisweet chocolate chips

Directions
Preheat oven to 375 degrees.  Line baking sheets with parchment paper.  Whisk together flours, salt and baking soda in a medium bowl.  In a large bowl, beat butter and sugars with an electric mixer; mix on medium speed until pale and fluffy.  Reduce the speed to low and add egg and vanilla; mix until combined.  Mix in banana.  Add flour mixture; mix just until combined.  Stir in oats and chocolate chips.  Drop dough by tablespoonful onto prepared baking sheets, spacing about 2 inches apart.  Bake cookies until golden brown and just set, 10-12 minutes.  Let cool on sheets.  Transfer cookies to wire racks; let cool completely.

  1. Perfect timing. I overbought bananas this week and they were looking pretty pathetic when I left for work this morning. This is the perfect weekend solution!
