These almond butter cookies are such a classic Christmas cookie. You have most likely had the almond crescent version but I prefer these because you can just roll the dough into a log, slice and bake! Not too sweet, crisp and buttery -- sometimes simple is just best.
Silver Dollar Cookies
Yields: approximately 36 cookies
Ingredients
1 cup butter (2 sticks), softened
4 tablespoons granulated sugar
2 tablespoons pure vanilla extract
2 cups all-purpose flour
2/3 cups almond meal (or finely ground almonds)
Powdered sugar for sprinkling
Directions
Cream together butter, sugar and vanilla until light and fluffy. Blend in flour and almond meal until just combined.
Place dough on a piece of plastic wrap. Roll up into a 10-inch log shape and refrigerate until firm, at least one hour.
Preheat oven to 350 F degrees. Remove dough from refrigerator and slice into 1/4 inch rounds. Place on parchment-lined cookie sheets. Bake cookies for 20 minutes or until golden brown. Remove from oven and immediately sprinkle with powdered sugar.
