Banana Bread Baked Oatmeal for One

Let me introduce you to the best breakfast I have had in quite some time.  I love all things bananas and especially banana bread (as you can see based on the variety of recipes we've shared in the past).  

I also eat at least one banana a day and it is always a part of my breakfast.  So it is clear why I am raving about this bowl of goodness.  It tastes like gooey banana bread fresh out of the oven.  A mighty fine way to start the day if you ask me.



Banana Bread Baked Oatmeal

Yields:  1 serving

Ingredients
1/3 cup old fashioned rolled oats
1/4 teaspoon brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon baking powder
pinch of salt
1/3 cup almond milk (or milk of choice)
1/3 cup mashed very ripe banana (about 1 medium banana)
1 egg white
1/4 teaspoon pure vanilla extract
maple syrup or agave for serving, optional
chopped toasted almonds or walnuts for serving, optional

Instructions
Preheat oven to 350°F.  Lightly butter an ovenproof ramekin or bowl. In a small mixing bowl, whisk together oats, sugar, cinnamon, baking powder, and salt. In a medium bowl, whisk together milk, mashed banana, egg white, and vanilla extract. Pour dry ingredients into wet and stir until combined. Pour mixture into prepared bowl. Bake for 20 minutes, or until oatmeal is puffed and set. Serve warm with maple syrup, agave nectar, toasted almonds, chopped walnuts, a sliced banana -- whatever strikes your fancy!

  2. I used a 10.5 ounce ramekin. Any oven-proof bowl would work fine though!
