Honey and Sea Salt Almond Butter
Monday, May 7, 2012
Nut butter definitely ranks in my top 5 favorite foods. I've made homemade almond butter a few times before -- I couldn't get enough of the Maple Cinnamon flavor that I shared with you a few months ago. This honey and sea salt version is a little more traditional, if that's your thing.
Feel free to roast raw almonds on your own. That is what I have done in the past. This time around, I bought dry roasted, unsalted almonds at Trader Joe's. No need to roast so this came together in minutes!
Side note -- I love watching the almonds whirl around the food processor, transforming from their whole state to this silky spread. Its the little things...
Honey and Sea Salt Almond Butter
Yields: about 1 cup (eight 2 tablespoon servings)
Source: Two Peas and their Pod
Ingredients
2 cups dry roasted, unsalted almonds
2 tablespoons honey
1 teaspoon sea salt
Directions
Place almonds in a food processor and turn on. Almonds will go through different stages but you will want to let your food processor run until the oil has released and almond butter has smoothed out (it will ball up right before this happens). Turn off food processor and transfer to a mason jar (or the container where you will be storing your almond butter).
Stir in salt and honey. Cover with an airtight lid and keep in the refrigerator.
