Feast your eyes on my latest and greatest creation -- chocolate-covered peanut butter grahams. My mom was hosting a little gathering last week and I was trying to think of a festive, no-bake treat to throw together at the last minute. I was going to make chocolate covered pretzels until I spotted the graham crackers in the cupboard.
I have since made a few batches with a variety of sprinkles and they look so cute all boxed up! I can't wait to make many more varieties of these.
I will do my best to provide a tutorial but I kind of made them on the fly.

Yields: 72 chocolate covered squares
Ingredients
2 sleeves of Graham Crackers (18 full sheets)
1/2 cup Creamy Peanut Butter
One (16 ounce) Package Chocolate Almond Bark (or QuikCandy)
Sprinkles for decorating
Directions
Preheat oven to 350 F degrees.
Line a baking sheet with parchment paper and place graham crackers (full sheets) on baking sheet. Pop into the oven for approximately 5-8 minutes. This will soften the graham crackers so you can cut them easily.
Remove from oven and, working very quickly, cut graham crackers into eight (8) 1" squares. If they begin to crumble as you cut, rewarm the crackers in the oven. Once the graham crackers have cooled, using a spoon or knife, spread a small amount of peanut butter on one side of cracker and top with another graham cracker square. You don't want peanut butter oozing out the sides! (**Note: the refrigerating step can be eliminated if short on time but it does make it easier to dip when the peanut butter is firm!).
Refrigerate graham sandwiches for about 2 hours before dipping in chocolate. Once ready for dipping, heat almond bark as directed. Using a fork, dip sandwiches in the chocolate (fully submerge!) -- tap off excess chocolate on the side of the bowl and set on parchment lined baking sheet to dry. If decorating, immediately top with sprinkles or toppings of your choice!
