Chocolate! These brownie cookies are super chocolatey (is that even a word?) and the texture is perfect. It's like a brownie on the inside with a slightly crisp outside...probably why they're called brownie cookies! I'm not even a huge chocolate fan but I loved these; they might even be my new favorite cookie. If I were you I would make these asap!

Yields about 30 cookies
Ingredients
466 grams dark chocolate, chopped (about 2 2/3 cups)
4 tablespoons unsalted butter, at room temperature
4 eggs
1 1/3 cups sugar
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1 cup semi-sweet chocolate chips
yummy batter!!
Directions
Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
In a heatproof bowl set over simmering water, heat the dark chocolate and butter until completely melted and smooth, stirring occasionally. Remove from heat and set aside. In a medium mixing bowl, combine the eggs, sugar and vanilla extract; whisk until well combined. In a small bowl, combine the flour and baking powder. Stir together and set aside.
Add the melted chocolate mixture to the sugar mixture and whisk until well combined. Mix in the dry ingredients, stirring just until incorporated. Fold in the chocolate chips until evenl distributed.

ReplyDeleteI just ate two - hah ha ha!!!
PS: They were very "chocolatey" (in a good way)...
I made these last night as an impromptu dessert. They were fantastic and super easy! They are my husbands new official favorite cookie.
ReplyDeleteI didn't add the semi-sweet chips (I didn't have any) and they were still "choclately" goodness.
I'm making these asap!!!
