Apologies for going MIA on you last week.  To make up for it, I'm sharing these little truffles with you.  If you haven't noticed, we really like truffles.  These might be my favorite thus far.


I knew Molly would love them too, so I made these for her birthday.  That's right -- Molly's Birthday was last week and I neglected to celebrate the day with a post.  However, its still her "birthday month" so you can still wish her a Happy Birthday here (in case you missed it).

One Year Ago:  White Chocolate Chip Cranberry Cookies

Oatmeal Raisin Cookie Dough Truffles

Ingredients
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups light brown sugar, packed
1/2 cup granulated sugar
7-8 tablespoons milk (enough to achieve doughy consistency)
1 teaspoon vanilla extract
1 3/4 cups flour
1/2 teaspoon salt
2 teaspoons cinnamon
2 cups old-fashioned oats
3/4 cup raisins
1/2 cup walnuts (if desired)

2 cups white chocolate candy melts OR good quality white chocolate chips


Directions
In a large bowl, beat butter, sugars, milk and vanilla extract until well blended. In a medium bowl combine flour, salt and cinnamon. Add dry ingredients to butter mixture, stirring just until combined.

Fold in rolled oats, raisins and walnuts (if desired) until well blended.  Cover and freeze for at least a half hour (or refrigerate for up to a day).

Line a baking sheet with parchment paper.  Melt chocolate melts in microwave as instructed OR melt white chocolate chips in a double boiler over low heat (simmering water) until melted, stirring constantly.

Working quickly, carefully spoon chocolate over truffles to coat. Using a small spoon, lift the truffle out of the chocolate, shake off excess and transfer to prepared sheet tray. Dollop a bit of extra chocolate on any parts that remain exposed.

Sprinkle each truffle with sprinkles, graham crackers, walnuts, toasted coconut, chopped raisins, chopped white chocolate -- whatever you want!  Refrigerate or freeze until hardened (about one hour). Can be stored in a covered container in refrigerator or freezer.
