Nutty-Seedy Snack Mix

Its no secret that we love snack mixes.  Honey-Nut Snack Mix, Oat Snack Mix and Sweet 'n Savory Snack Mix have all made an appearance here.  This snack mix was inspired by the chocolate candy coated sunflower seeds that I picked up at Trader Joe's.  They are addicting on their own but I wanted to incorporate them into a recipe.  I sort of threw this together using ingredients I had in the cupboard.  The best part, the mixture I used created big crunchy clusters -- so good!

My parents were in town this past weekend visiting from Columbus, so I sent them home with a bag for the drive back.


Nutty-Seedy Snack Mix
Source:  slightly adapted from Honey-Nut Snack Mix
Yields:  7 cups

Ingredients
4 cups cereal squares (I used Puffins but Chex and Oat Squares are great!)
2 cups uncooked quick-cooking oats
1 cup sunflower seeds
1/2 cup shredded coconut (sweetened or unsweetened)
1 1/2 teaspoons cinnamon
1/4 cup peanut butter
1/4 cup butter
1/2 cup firmly packed brown sugar
1 cup chocolate candy coated sunflower seeds
1/2 cup golden raisins

Directions
Combine first 4 ingredients in a large bowl; set aside.

Stir together cinnamon, peanut butter, butter and brown sugar in a small saucepan over low heat, stirring until butter melts and sugar dissolves.

Pour peanut butter mixture over cereal and seed mixture, stirring to coat. Spread in a single layer on an aluminum foil-lined 15- x 10-inch jellyroll pan.

Bake at 325° for 15-20 minutes, stirring once. Spread immediately on wax paper; cool. Add chocolate covered sunflower seeds and raisins once cool.  Store snack mix in an airtight container.
