Since chicken salad makes an appearance at just about every bridal or baby shower, I thought I'd share this recipe with you first! It is light, sweet and savory and one of my favorite recipes from the day.
Not only did the basil and strawberries pair perfectly together, but they made for a beautiful presentation (we all know that is just as important as taste!).
I was never a fan of chicken salad growing up because most versions I tried were so heavy on the mayo. This is dressed mostly in poppyseed dressing with just a few tablespoons of light mayo. You could even swap the mayo for plain greek yogurt if you'd like.
Two of my other favorite chicken salad recipes are this cilantro chicken salad and this cranberry pecan chicken salad.
Strawberry Poppyseed Chicken Salad

Yields: 6 servings (1 serving = approximately 1 cup)
Ingredients
4 cups chopped chicken (fully cooked)
1/2 cup poppyseed salad dressing
3 Tablespoons light mayonnaise
1/2 teaspoon freshly ground black pepper
2 Tablespoons chopped scallions
2 Tablespoons chopped fresh basil
2 cups cubed strawberries
Directions
In a large bowl, combine the chicken, salad dressing, mayonnaise, and pepper. Stir well to coat. If it seems a bit dry, add a little more dressing or mayonnaise. Gently fold in the chopped scallions, basil, and strawberries. Taste and season with salt and/or pepper. Refrigerate until ready to serve.
This salad looks so yummy, made me hungry just looking at it.
