Smoky "Pimento" Cheese Sandwiches

You know when you make something because you know it will be good, but more because it is easy and you are attempting to prepare 15 other dishes?  When I made these sandwiches, I put them in that category (FYI -- pimento is in quotes because this recipe doesn't actually contain any pimentos!).  However, they turned out to be a hit amongst everyone!

The smoked gouda cheese and sun-dried tomatoes create an unbelievable smoky flavor.  This would also be great served with crackers or pita chips as an appetizer.


Smoky "Pimento" Cheese Sandwiches

Ingredients
3 ounces cream cheese, softened
1/2 cup mayonnaise
1 teaspoon paprika
1/4 teaspoon salt
2 cups (8 ounces) shredded smoked Cheddar cheese
2 cups (8 ounces) shredded smoked Gouda cheese
4 ounces (Half of a 8.5 ounce jar) sun-dried tomatoes in oil, drained and chopped
14 bread slices (sourdough and dark wheat)

Directions
Stir together cream cheese and next 3 ingredients in a large bowl until blended. Stir in shredded cheeses and sun-dried tomatoes until combined.

Spread cheese mixture on half of bread slices (about 1/3 cup on each); top with remaining bread slices.
