Oatmeal Raisin Cookie Granola

I can't take any credit for this recipe.  Well, I did make it and eat the entire batch (you've been warned -- it is addicting).  Anyways, I didn't discover it or come up with the genius idea to create granola using all of the delicious flavors of an oatmeal cookie.  My baking bestie sent me the recipe multiple times and then begged me to make it.  So here it is -- the best granola you've ever tasted.



Oatmeal Raisin Cookie Granola

Yields:  6 cups

Ingredients
2 1/2 cups old-fashioned rolled oats (not quick cooking)
1/2 cup sliced raw almonds
1/2 cup whole raw almonds
1 tablespoon ground cinnamon
2/3 cup honey
2/3 cup peanut butter
1 cup raisins
1/3 cup semi-sweet chocolate chips

Directions
Preheat oven to 325 degrees.  Line large baking sheet with parchment paper and set aside.

In a large bowl, combine oats, almonds and cinnamon.  Set aside.

In a small bowl, combine peanut butter and honey and melt in microwave for about 25 seconds.  Stir until smooth.  Pour over oat mixture until thoroughly combined.

Pour mixture onto prepared baking sheet.  Bake for 20 minutes, stirring halfway through (make sure to stir otherwise it won't cook evenly).  Remove from the oven and mix in raisins and chocolate chips while still hot (so the chocolate will melt!).  Once mixture has cooled, store in a airtight container.
