Baked Crispy Calamari

Molly and I made this calamari back on Father's Day and I completely forgot to post it.  It was Molly's idea to make because it is our Dad's absolute favorite appetizer.  I had never even thought about making it at home because it seemed like too much work. This baked version was so simple though.

In case you're looking for a fun Sunday dinner idea, we went with a little Italian themed Father's Day.  An appetizer of lightly breaded and baked calamari and for the main course, we served up homemade thin crust pizzas!  Meat-lovers for the boys and artichoke for the girls.  A simple meal but loved by all.


Baked Crispy Calamari
Yields:  5 servings (appetizer portion)

Ingredients
1 pound calamari, cleaned and cut into 1/2 inch rings)
1 cup all-purpose flour, more if needed
2 eggs, lightly beaten
2 cups panko bread crumbs
1/2 teaspoon garlic powder
Sea salt, to taste
Ground black pepper, to taste
Non-stick cooking spray
Pizza sauce or aioli, for serving

Directions
Preheat oven to 400°F.  Place parchment paper on a baking sheet and mist with cooking spray.

Place flour in one bowl, lightly beaten eggs in a second, and the panko and garlic powder in a third.

Place calamari, a few at a time, into the flour mixture, then transfer to second bowl to coat with egg, and finally into the third bowl to coat all surface of the calamari with panko.

Place coated pieces on baking sheet, not touching. Repeat until all calamari is coated.  Spray top of calamari with cooking spray.

Bake 10 minutes; turn pieces with tongs; return to oven for an additional 5 – 10 minutes until panko has turned a golden brown. Serve immediately with pizza sauce or whatever dipping sauce you prefer!
