Banana Peanut Butter Chocolate Chip Muffins

These muffins incorporate three of my favorite foods:  bananas, chocolate, and peanut butter.  You may notice a theme here, we love the chocolate peanut butter combo.  I have actually made two other chocolate peanut butter recipes in the past week that I will be posting here shortly.

Banana Peanut Butter Chocolate Chip Muffins

Yields:  12 muffins

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 ripe bananas, mashed
2/3 cup peanut butter
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 egg
1/4 cup canola oil
1 cup dark chocolate chips or chunks 
1 tablespoon flour
1 tablespoon turbinado sugar

Directions
Preheat over to 375 degrees.  Grease or line 12 muffin cups.

In a large bowl mix together 1 1/2 cups flour, baking soda, baking powder, salt and cinnamon. In a second bowl beat together bananas, peanut butter, sugars, vanilla, egg and canola oil. Stir the banana mixture into the flour mixture until just combined (you may still have flour streaks but do not over-stir!).

In a small bowl mix together the chocolate and 1 tablespoon flour (this will prevent the chocolate from sinking).  Stir the chocolate into the batter.  

Spoon batter evenly into the prepared muffin cups.  Sprinkle the tops of each muffin with turbinado sugar. Bake in preheated oven for 12-15 minutes, until a toothpick inserted into the center of a muffin comes out clean.
