Whole Grain Banana Pancakes

This is the perfect weekend breakfast treat after long week of boring breakfasts before work.  These pancakes are simple to make and are much more nutritious than your standard buttermilk pancake.  I highly recommend these!




Quick Whole Grain Banana Pancakes
Yields about 8 pancakes

Serving Size: 1 pancake  Calories: 60  Fat: 1g  Fiber: 2g  Weight Watchers Points: 1

Ingredients
1 large overripe banana
1 egg
1/2 cup skim milk
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
3/4 cup whole wheat flour

Directions
Mash the banana in a medium bowl.  Add the egg and the milk.  Whisk until frothy.

In a smaller bowl, add the flour, baking soda, baking powder, and nutmeg.  Sift into the banana mixture.  Mix until just blended.

Pour batter onto a non-stick skillet or griddle sprayed with Pam, over medium heat.  Cook about 2 minutes on each side (small bubbles will form but not as many as traditional pancakes).
