Homemade Chocolate Granola

I came across a recipe for Chocolate Granola via the lovely and talented La Tartine Gourmande (I could browse through her photography all day).  Of course, my first thought was, "Why haven't I already made this?"  I love homemade granola, I love chocolate, so it would only make sense.  Turns out -- it is as amazing as it sounds.

One Year Ago:  Four Cheese Mac & Cheese

Chocolate Coconut Granola
Source:  adapted from La Tartine Gourmande
Yields:  approximately 5 1/2 cups

Ingredients
3 cups old-fashioned rolled oats
1 cup rice puffs
1 cup slivered or chopped almonds
1 cup unsweetened coconut (you could use sweetened)
1 tablespoon unsalted butter
1/4 teaspoon sea salt
2 tablespoons light brown sugar
1/3 cup honey
1/3 cup water
1 teaspoon pure vanilla extract
1/2 cup chopped dark chocolate (70% or 64% cocoa contents) -- I found dark chocolate chips!

Directions
Preheat the oven to 300 F and have a large baking sheet covered with parchment paper ready.

In a small pot, combine the water, honey, sugar, butter, salt and vanilla.  Bring to a simmer and let cook until the sugar is dissolved.

In a large bowl, combine the other ingredients minus the chopped dark chocolate.  Stir in the liquid to the dry ingredients.

Transfer the granola mixture to the baking sheet and cook for 45 minutes, stirring with a wooden spoon a few times to make sure that the granola cooks evenly.  Let cool completely.

Transfer to a air-tight container and add the chocolate.
