I have always loved fruit salsas -- there is just something so great about the sweetness of the fruit, paired with crispy, salty tortilla chips. Until this past weekend, I had never made a homemade fruit salsa.
As soon as I saw this recipe for peach salsa, I had to make it. The preparation just involves chopping the ingredients and mixing together -- easy enough! This would be great with chips, obviously, but I put it on top of a piece of grilled chicken... I also ate it by the spoonful. Peaches are in their prime so bring this to your next barbeque!

Yields: 12 servings
Prep time: 15 minutes
Ingredients
1 1/2 cups ripe peaches, diced (2-5 depending on size)
1 cup tomato, diced (about 2 medium)
1 tablespoon jalapeƱo, finely minced (about 1/2)
1/4 cup yellow pepper, small dice
1/4 cup red onion, finely diced
1 tablespoon cilantro, chopped
juice of 1 lime
1/4 teaspoon chili powder
1 tablespoon brown sugar, packed
salt and pepper, to taste
Directions
Mix all ingredients together well. Cover and refrigerate for about an hour, or until ready to serve.
