Chipotle and Rosemary Roasted Nuts

With the holiday season in full force, I like to keep a list of ideas for entertaining.  These mixed nuts the perfect snack to set out before you serve appetizers or your meal.  They also make a great homemade gift!



Chipotle and Rosemary Roasted Nuts
Yields:  4 cups

Ingredients
4 cups mixed nuts
1 tablespoon vegetable oil
2 1/2 tablespoons pure maple syrup
2 tablespoons light brown sugar, lightly packed
1 1/2 tablespoons orange juice
1 1/2 teaspoons ground chipotle powder
2 tablespoons minced fresh rosemary, divided
1 1/2 teaspoons coarse salt

Directions
Preheat oven to 350 degrees F.  In a large bowl, combine nuts with oil, syrup, sugar, juice, chipotle powder, half of the rosemary and 1 teaspoon salt.  Stir to coat completely.

Add nuts in a single layer to a greased sheet pan.  Roast for about 25 minutes, stirring twice, until nuts are golden brown.  Remove from oven and sprinkle with remaining rosemary and salt.  Toss well and allow to cool completely, stirring occasionally to prevent nuts from sticking together.  Store in an airtight container.
