Caprese Salad Skewers

Hopefully over the next few weeks, we can help provide some great recipe ideas for the holiday season!  These caprese salad skewers are a delicious and easy appetizer to serve at any occasion.  I think these bright little bites also make for a great presentation.  

I have to warn you -- I don't have "measurements" for what I used.  I just bought a carton of cherry tomatoes, a container of fresh mozzarella bites and a handful of fresh basil.  This made about 45 skewers.


Caprese Salad Skewers with Balsamic Reduction

Ingredients
Red Cherry Tomatoes
Fresh Basil 
Fresh Mozzarella Bites in Water
Sea Salt
1/4 cup Balsamic Vinegar
Round Toothpicks

Thread each toothpick with a tomato, a piece of basil folded in half and mozzarella cheese.  

To make the balsamic reduction, pour approximately 1/4 cup balsamic vinegar into a small saucepan heated over medium-low heat until reduced and thickened.  It should only take a few minutes.  If it gets too thick, just add a little more vinegar to thin it out.  

Place skewers on a plate, drizzle with balsamic reduction and sprinkle with sea salt.
