Banana Bread Granola

If you've been a follower since the beginning, you've probably noticed an abundance of recipes for bananas and granola. I finally decided to bring the two together in the form of Banana Bread Granola.
I wasn't sure what to expect when I threw this together. After making it the first time, I decided I wouldn't change a thing about it! It tastes exactly like a slice of banana bread, combined with the crunchy, nutty texture of granola. Serve up with some Greek yogurt or eat straight from the bag.

Yields: 2 1/2 cups

Ingredients
1 1/4 cup dry rolled oats (not quick-cooking)
1/4 cup whole raw almonds
1/4 cup sliced raw almonds
1/2 teaspoon cinnamon
1 small ripe banana, mashed (about 1/3 cup)
1/4 cup honey
1 tablespoon canola oil
1 tablespoon packed brown sugar
1/2 teaspoon pure vanilla extract
1/4 teaspoon baking powder
1/8 teaspoon salt
Directions
Preheat oven to 325 F degrees. Line a baking sheet with parchment paper and set aside.
Combine rolled oats, almonds and cinnamon in a medium bowl. Set aside.
In a small bowl, combine mashed banana, honey, oil, brown sugar, vanilla, baking powder and salt. Add the banana mixture to dry ingredients and mix until thoroughly combined. Spread mixture evenly across prepared baking sheet. (I left mine in small clumps to make sure the final product would have lots of clusters.)
Bake for 23-25 minutes, stirring every 8-10 minutes. Watch closely towards the end so granola does not burn.
