Northstar Breakfast Burrito

Northstar Cafe is one of my all time favorite places to eat in Columbus, OH. I decided to try and recreate their breakfast burrito since I can't have it down in the south. I have never had a breakfast burrito, or any burrito for that matter, that even compares to Northstar's. I would eat anything in this burrito on its own, but the combination of ingredients together is so delicious!
I also recreated their ricotta pancakes a while ago. Also super delicious!
Northstar Cafe Breakfast Burrito

Yields one burrito
Ingredients
1 10-inch sun-dried tomato wrap
1 egg, cooked over medium
1 slice of center cut bacon, cookedP
1 piece of good quality sharp white cheddar cheese
1 very small sweet potato, peeled and diced
1/4 cup black beans, drained and rinsed
1/4 of a large red pepper, sliced lengthwise
a few slices of onion (add according to your taste preference)
a couple sprigs of cilantro
salsa for serving
Directions
Combine diced sweet potato, red pepper slices, and onion slices in a skillet. Flavor with salt and pepper. Cook on medium heat until all vegetables are tender, about 10-15 minutes.
Cook bacon in a skillet until desired doneness. Cook egg in another skillet until cooked to over-medium.
Lay wrap on a plate. Layer with slice of cheese, bacon, egg, vegetables, black beans, and cilantro. Fold and roll wrap until closed.
Place wrap on a panini-maker and press down lightly. Cook on high heat until heated through and grill lines appear on the wrap.
Serve with fresh salsa and enjoy!
